Eléonore Marion is a French Private Chef. With a rich history in the culinary world, her journey is as diverse as the dishes she creates. Restaurant trained, Eléonore was raised in Burgundy where her family owned a Michelin Star awarded restaurant (1985), “Le Rempart,” since 1956. Superyacht Chef and Michelin acclaimed restaurant owner, her career took her all the way to Dubai UAE where she chose to settle when not cruising the world.

A MICHELIN STAR UPBRINGING

Born and raised in the Michelin Star Restaurant, “Le Rempart” in Burgundy, France, Eléonore’s culinary journey began on a solid ground. In 2005, she trained intensively at “Le Rempart,” learning the A to Z of cuisine with the Executive Chef and his certified professional cooking team. From provisioning, cleaning, preparing, cutting, seasoning, to cooking and serving, this immersive internship laid the foundation for her 19-year cooking career.

In 2007, she took on the role of garde manger/cook at “Le Rempart,” where she was in charge of mise en place and service. Her responsibilities extended to the a la carte menu, daily suggestions, patron lunches and dinners, as well as the hotel and restaurant staff catering for 25 people.

 

EDUCATION & CERTIFICATION

Alongside her practical experience, Eléonore also pursued formal education. In 2000, she earned a Bachelor Degree in English and American Literature and Civilization from Lyon III University. Further, in her pursuit of excellence, she acquired several certifications. In 2022, she became a Certified LV1 Nutrition Coach with Precision Nutrition. She also holds a Food Hygiene and Safety for Catering certification, Level 2 and Level 3 Food Safety certificates, and a Ship’s Cook Certificate.

ON THE HIGH SEAS: THE SUPERYACHT CHEF

Eléonore’s culinary skills found applications beyond the restaurant kitchen. From 2005 to 2011 and again from 2019 to 2022, she served as a Superyacht Chef, providing and catering for crew and guests during busy charter and private seasons in locations as varied as the Mediterranean, Caribbean, Bahamas, and Florida.

RESTAURANT OWNER & PERSONAL CHEF

Her culinary journey took a turn in 2011 when she opened her restaurant, “Elly’s,” in Saint-Raphaël, France. Alongside her partner, Michelin trained Chef Franck Chabod, Eléonore served hospitality and designed the interior and the website. “Elly’s” functioned with high standards, serving local seasonal produce and a chosen selection of 114 wines, earning high ratings in Michelin, Gault&Millau, Trip Advisor, and in the press.

In 2019, she transitioned to a new role as a Personal Traveling Chef for Omar Al-futtaim, a Dubai based businessman, cooking intensively and extensively both on shore and offshore, adapting to different contexts, settings, locations, and teams.

A MULTIFACETED TALENT

Eléonore’s talents extend beyond the kitchen. She is fluent in English,  an can hold conversations in Italian, and German, has a passion for writing poetry and essays, and is a certified yoga teacher with over nine years of practice. She also has a knack for web design and interior design, as evidenced by her work on her restaurant and her home.

A PASSION FOR FITNESS

Beyond her culinary and creative pursuits, Eléonore is a dedicated athlete. She has participated in multiple 10km runs, half marathons, marathons, cycling races, and triathlons in France, Spain, UAE, and other countries. She became an Ironman in June 2023. This commitment to physical fitness reflects in her menus and creations which are straightforward, uncomplicated, well balanced, fresh, flavoursome, appealing, colourful and to the point.
